Ingredients:
190 grams of margarine (about 3/4 cup)
¼ cup brown sugar
1/3 cup sugar
1 tsp vanilla
½ tsp cinnamon
¼ tsp ground clove
1 ½ tsp fresh ginger, finely chopped
½ tsp ground nutmeg
1 tsp baking soda
2 tbsp ground ginger
2 cups all purpose flour
Preparation:
Preheat oven to 350°F
Blend butter and sugar together to form a sticky dough. Add all of the other ingredients except for the flour into the bowl. Blend well and then add flour a little at a time with the mixer on low. Form dough into 1-inch balls and roll them in granulated sugar. Transfer to an oiled baking sheet, leaving about an inch between each cookie.
Bake for 12 to 15 minutes until golden brown on the bottom.

Please post your recipe for coconut rice! I was at Lapa Rios back in 1999 and still think about that dish. I hope it is still served. thanks!
